1. Mix 4 cups of flour, 1 tbsp baking powder, 1/4 tbsp baking soda, 1/8 tbsp salt, and...what am I forgetting?

2. Ah, a whole cup of sugar for color.

3. Mix in 1 cup water or milk and 1/2 cup cooking oil. Knead the dough for about 10 minutes. You should be able to slice through the dough with no problem. Add flour if you can't but I like these soft so I try and use the minimal amount.

4. Let the dough rise in a warm place (not difficult in Africa) covered for 40 minutes.
5. Roll out the dough into a circle or oval.
6. Cut the dough into small squares.

7. Some say these are the Legos of Tanzanian food. Hey that looks like...

...Nope, not edible.

8. Fry the cake in oil until brown on all sides.
9. Lay them out on paper to absorb the grease then enjoy.
